MEDITERRANEAN PASTA SALAD

Makes 3 quarts
1 (12-ounce) package large shell macaroni
½ (62-ounce) jar Chef's Harvest® Premium Marinated Vegetable Salad
1 ½ cups (1 small) thinly sliced red onion
½ cup chopped parsley
1 teaspoon salt
½ teaspoon coarse ground black pepper
Cook shells according to package directions; rinse and drain and place in a large bowl.
Empty the contents of the Vegetable Salad into another bowl and gently stir to mix well.
Portion one-half jar (3 ½ cups) Vegetable Salad, including vinaigrette, over shells. Return remaining Vegetable Salad to jar and refrigerate for further use.
Stir in remaining ingredients. Cover and refrigerate until chilled.
